Description

A delicious vegetarian wrap with smoky grilled zucchini, creamy feta, and hearty chickpeas, all drizzled with a refreshing herbed yogurt sauce. Perfect for lunch or dinner.


Ingredients

  • For the Herbed Yogurt:
  • 1 cup plain Greek yogurt
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh mint
  • 1 clove garlic, minced
  • 2 tablespoons lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • For the Wraps:
  • 2 medium zucchini, sliced lengthwise into 1/4-inch thick planks
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/2 cup crumbled feta cheese
  • 4 large flour tortillas or wraps
  • 2 cups mixed greens or spinach (optional)

Instructions

  1. In a small bowl, combine Greek yogurt, dill, mint, garlic, lemon juice, salt, and pepper. Mix until smooth. Refrigerate until ready to use.
  2. Preheat a grill or grill pan over medium-high heat. Brush zucchini slices with olive oil and season with salt and pepper.
  3. Grill zucchini for 3-4 minutes per side, until tender and charred. Remove from grill and set aside.
  4. Warm tortillas according to package instructions.
  5. To assemble, spread a generous amount of herbed yogurt on each tortilla. Place grilled zucchini slices, chickpeas, crumbled feta, and mixed greens if using in the center. Fold in sides and roll tightly.
  6. Slice in half and serve warm or at room temperature. Drizzle with extra herbed yogurt if desired.

Notes

You can use any type of flatbread. For a vegan option, omit feta and use dairy-free yogurt. Add red onion or cucumber for extra crunch.
