- 1 tablespoon olive oil
- 1 pound ground beef
- 1 small onion, diced
- 3 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon dried oregano
- 1 (14.5 oz) can diced tomatoes, drained
- 5 ounces fresh spinach
- 1/2 cup crumbled feta cheese
- Optional: fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add ground beef and cook, breaking it apart, until browned (about 5-7 minutes). Drain excess fat if needed.
- Add onion and cook until softened, about 3 minutes. Add garlic, salt, pepper, and oregano; cook for 1 minute.
- Stir in diced tomatoes and bring to a simmer. Cook for 2-3 minutes.
- Add spinach in batches, stirring until wilted, about 2 minutes.
- Remove from heat and sprinkle feta cheese over the top. Let stand for 1 minute so the feta softens.
- Serve warm, garnished with parsley if desired.
Notes
For a lower-carb option, serve over cauliflower rice. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
