A quick and flavorful one-pan meal with seasoned ground beef, wilted spinach, and creamy feta cheese.

- 1 lb ground beef
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes, undrained
- 5 oz fresh spinach
- 1/2 cup crumbled feta cheese
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add ground beef and cook until browned, breaking it up with a spatula. Drain excess fat.
- Add diced onion and cook until softened, about 3 minutes. Add garlic and cook for 1 minute.
- Stir in diced tomatoes with their juices, dried oregano, salt, and pepper. Bring to a simmer.
- Add fresh spinach in handfuls, stirring until wilted. Cook for 2-3 minutes.
- Sprinkle crumbled feta cheese over the top. Cover and let cook for 1 minute until feta softens.
- Serve immediately.
Notes
For a dairy-free version, omit feta or use a vegan alternative. Serve with rice or crusty bread.
