A hearty and low-carb casserole with ground beef, zucchini, and cheese. Perfect for a keto-friendly dinner.

- 1 lb ground beef
- 2 medium zucchinis, sliced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, drained
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat. Add onion and garlic; cook until softened, about 3 minutes.
- Add ground beef; cook until browned, breaking it up. Drain excess fat.
- Stir in diced tomatoes, oregano, basil, salt, and pepper. Simmer for 5 minutes.
- Layer half the zucchini slices in the bottom of a greased 9×13-inch baking dish.
- Spread half the beef mixture over the zucchini.
- Repeat layers with remaining zucchini and beef mixture.
- Top with mozzarella and Parmesan cheeses.
- Bake uncovered for 20-25 minutes, until bubbly and cheese is melted and golden.
- Let stand 5 minutes before serving.
Notes
For extra flavor, add red pepper flakes or Italian seasoning. Can be made ahead and refrigerated before baking.
