Ground Turkey Stuffed Sweet Potatoes

Description

A nutritious and flavorful dish featuring ground turkey stuffed into baked sweet potatoes, perfect for a healthy meal.


Ingredients

  • 4 medium sweet potatoes
  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheese
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 400Β°F (200Β°C).
  2. Wash and prick the sweet potatoes with a fork, then bake them on a baking sheet for 45-50 minutes until tender.
  3. While the potatoes are baking, heat olive oil in a skillet over medium heat.
  4. Add onion, garlic, and bell pepper to the skillet and sautΓ© for 5 minutes until softened.
  5. Add ground turkey to the skillet and cook until browned, breaking it up with a spoon.
  6. Stir in cumin, chili powder, salt, and pepper, then add black beans and cook for another 2 minutes.
  7. Once the sweet potatoes are done, remove them from the oven and let them cool slightly.
  8. Cut a slit in each sweet potato and stuff with the turkey mixture.
  9. Top with shredded cheese and broil for 2-3 minutes until cheese is melted.
  10. Garnish with fresh cilantro and serve immediately.

Notes

For a spicier version, add diced jalapeΓ±os to the turkey mixture. Ensure turkey is fully cooked to an internal temperature of 165Β°F.
