- 4 medium sweet potatoes
- 1 pound ground turkey
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup black beans, drained and rinsed
- 1 cup shredded cheese
- Fresh cilantro for garnish
Instructions
- Preheat the oven to 400Β°F (200Β°C).
- Wash and prick the sweet potatoes with a fork, then bake them on a baking sheet for 45-50 minutes until tender.
- While the potatoes are baking, heat olive oil in a skillet over medium heat.
- Add onion, garlic, and bell pepper to the skillet and sautΓ© for 5 minutes until softened.
- Add ground turkey to the skillet and cook until browned, breaking it up with a spoon.
- Stir in cumin, chili powder, salt, and pepper, then add black beans and cook for another 2 minutes.
- Once the sweet potatoes are done, remove them from the oven and let them cool slightly.
- Cut a slit in each sweet potato and stuff with the turkey mixture.
- Top with shredded cheese and broil for 2-3 minutes until cheese is melted.
- Garnish with fresh cilantro and serve immediately.
Notes
For a spicier version, add diced jalapeΓ±os to the turkey mixture. Ensure turkey is fully cooked to an internal temperature of 165Β°F.
