Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup barbecue sauce
  • 1 can (20 oz) pineapple chunks, drained
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 red onion, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat grill to medium-high heat.
  2. In a bowl, mix chicken breasts with barbecue sauce, ensuring they are well coated.
  3. Lay out four sheets of heavy-duty foil.
  4. On each foil sheet, place a chicken breast and top with pineapple chunks, bell peppers, and onion slices.
  5. Drizzle with olive oil and season with salt and pepper.
  6. Fold the foil around the ingredients to create sealed packets.
  7. Grill packets for 15-20 minutes, or until chicken is cooked through.
  8. Carefully open packets and garnish with fresh cilantro before serving.

Notes

For a spicier version, add crushed red pepper flakes to the barbecue sauce mixture.
