- 1 can (20 oz) pineapple chunks, drained
- 1/2 cup soy sauce
- 1/4 cup brown sugar

Instructions
- Step 1: Place chicken thighs in the crockpot.
- Step 2: Add pineapple chunks, soy sauce, brown sugar, garlic, bell pepper, and onion.
- Step 3: Stir to combine and cover the crockpot.
- Step 4: Cook on low for 6-8 hours or until chicken is tender.

Notes
For a thicker sauce, mix 1 tablespoon cornstarch with water and add in the last 30 minutes.
