Description

A warm and comforting soup packed with vegetables and lentils.


Ingredients

  • 1 cup dried lentils
  • 2 onions, diced
  • 3 carrots, sliced
  • 4 celery stalks, chopped
  • 1 can diced tomatoes
  • 6 cups vegetable broth
  • Salt and pepper to taste

Instructions

  1. Rinse the lentils under cold water.
  2. In a large pot, sautΓ© onions, carrots, and celery until softened.
  3. Add lentils, tomatoes, and broth. Bring to a boil.
  4. Simmer for 30-40 minutes until lentils are tender.
  5. Season with salt and pepper.
