Ingredients

- 1 cup dried lentils
- 2 onions, diced
- 3 carrots, sliced
- 4 celery stalks, chopped
- 1 can diced tomatoes
- 6 cups vegetable broth
- Salt and pepper to taste
Instructions
- Rinse the lentils under cold water.
- In a large pot, sautΓ© onions, carrots, and celery until softened.
- Add lentils, tomatoes, and broth. Bring to a boil.
- Simmer for 30-40 minutes until lentils are tender.
- Season with salt and pepper.
