- For the filling:
- 4 large eggs
- 1/4 cup milk
- Salt and black pepper to taste
- 1 tablespoon olive oil
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 2 turkey sausage patties, cooked and crumbled
- 1/2 cup canned black beans, rinsed and drained
- 1/4 cup chopped fresh spinach
- 1/4 cup shredded cheddar cheese
- For serving:
- 2 large flour tortillas (10-inch)
- Optional toppings: salsa, avocado slices, hot sauce
Instructions
- 1. In a medium bowl, whisk together eggs, milk, salt, and pepper until well blended.
- 2. Heat olive oil in a large nonstick skillet over medium heat. Add onion and bell pepper; cook until softened, about 3 minutes.
- 3. Add crumbled turkey sausage and black beans; cook for another 2 minutes, stirring occasionally.
- 4. Pour the egg mixture into the skillet. Let it cook undisturbed for 30 seconds, then gently stir with a spatula, folding the eggs over the fillings. Continue cooking until eggs are set but still moist, about 2-3 minutes.
- 5. Add chopped spinach and cheddar cheese; stir until spinach wilts and cheese melts, about 1 minute.
- 6. Remove from heat. Divide the egg mixture evenly between the two tortillas. Fold in sides and roll up tightly.
- 7. Serve immediately with desired toppings.
Notes
For a lower-carb option, use large lettuce wraps instead of tortillas. You can also substitute chicken sausage or tofu scramble for the turkey sausage.
