Ingredients

  • For the crust: 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • For the filling: 2 large eggs
  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon

Instructions

  1. Preheat the oven to 350Β°F (175Β°C) and grease an 8×8 inch baking pan.
  2. In a bowl, mix the crust ingredients until crumbly, then press into the pan and bake for 15-20 minutes.
  3. While the crust bakes, whisk together the filling ingredients until smooth.
  4. Pour the filling over the hot crust and bake for an additional 20-25 minutes until set.
  5. Allow to cool completely before cutting into squares.
