Heavenly Homemade French Eclairs

Description

Crispy choux pastry filled with rich vanilla cream and topped with chocolate glaze.


Ingredients

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1 teaspoon sugar
  • 1/4 teaspoon salt
  • For the filling: 2 cups heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • For the glaze: 1 cup semisweet chocolate chips
  • 1/4 cup heavy cream

Instructions

  1. Preheat oven to 425Β°F (220Β°C). Line a baking sheet with parchment paper.
  2. In a saucepan, bring water and butter to a boil.
  3. Stir in flour, sugar, and salt until the mixture forms a ball. Remove from heat and let cool slightly.
  4. Beat in eggs one at a time until smooth.
  5. Pipe dough onto the baking sheet into 4-inch strips.
  6. Bake for 15 minutes, then reduce heat to 375Β°F (190Β°C) and bake for another 10-15 minutes until golden.
  7. For filling: Whip cream, powdered sugar, and vanilla until stiff peaks form.
  8. Once eclairs are cool, slice and fill with cream mixture.
  9. For glaze: Melt chocolate and cream together, then drizzle over eclairs.
  10. Cool and serve.

Notes

Store in an airtight container for up to 2 days. For best results, use fresh ingredients.
