Crispy choux pastry filled with rich vanilla cream and topped with chocolate glaze.
Ingredients

- 1 cup water
- 1/2 cup unsalted butter
- 1 cup all-purpose flour
- 4 large eggs
- 1 teaspoon sugar
- 1/4 teaspoon salt
- For the filling: 2 cups heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- For the glaze: 1 cup semisweet chocolate chips
- 1/4 cup heavy cream
Instructions
- Preheat oven to 425Β°F (220Β°C). Line a baking sheet with parchment paper.
- In a saucepan, bring water and butter to a boil.
- Stir in flour, sugar, and salt until the mixture forms a ball. Remove from heat and let cool slightly.
- Beat in eggs one at a time until smooth.
- Pipe dough onto the baking sheet into 4-inch strips.
- Bake for 15 minutes, then reduce heat to 375Β°F (190Β°C) and bake for another 10-15 minutes until golden.
- For filling: Whip cream, powdered sugar, and vanilla until stiff peaks form.
- Once eclairs are cool, slice and fill with cream mixture.
- For glaze: Melt chocolate and cream together, then drizzle over eclairs.
- Cool and serve.
