A quick and tasty vegetable lo mein dish with fresh veggies and noodles.

- 8 ounces lo mein noodles
- 2 tablespoons vegetable oil
- 1 cup broccoli florets
- 1 cup carrots, julienned
- 1 cup bell peppers, sliced
- 1/2 cup snow peas
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
Instructions
- Cook the lo mein noodles according to package instructions, then drain and set aside.
- Heat vegetable oil in a large wok or skillet over medium-high heat.
- Add garlic and ginger, stir-fry for 1 minute until fragrant.
- Add broccoli, carrots, bell peppers, and snow peas; stir-fry for 5-7 minutes until vegetables are tender-crisp.
- Add the cooked noodles to the wok, then pour in soy sauce, oyster sauce, and sesame oil.
- Toss everything together and cook for another 2-3 minutes, seasoning with salt and pepper to taste.
- Serve hot and enjoy your flavorful vegetable lo mein.
Notes
For a spicier version, add chili flakes or sriracha. This recipe is vegan if oyster sauce is substituted with a vegan alternative.
