Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/4 cup honey
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups cooked rice
  • 1 ripe avocado, diced
  • 1/4 cup chopped cilantro
  • 1 tablespoon lime zest

Instructions

  1. In a bowl, whisk together honey, lime juice, olive oil, garlic powder, salt, and pepper.
  2. Add chicken breasts to the marinade and let sit for at least 30 minutes.
  3. Preheat grill or pan over medium heat.
  4. Grill chicken for 6-7 minutes per side until cooked through.
  5. In a separate bowl, mix cooked rice with diced avocado, cilantro, and lime zest.
  6. Slice the cooked chicken and stack it over the avocado rice mixture.
  7. Serve immediately.

Notes

For a spicier version, add chili flakes to the marinade. Ensure chicken reaches an internal temperature of 165Β°F.
