Ingredients

- 2 boneless, skinless chicken breasts
- 1/4 cup honey
- Juice of 2 limes
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 cups cooked rice
- 1 ripe avocado, diced
- 1/4 cup chopped cilantro
- 1 tablespoon lime zest
Instructions
- In a bowl, whisk together honey, lime juice, olive oil, garlic powder, salt, and pepper.
- Add chicken breasts to the marinade and let sit for at least 30 minutes.
- Preheat grill or pan over medium heat.
- Grill chicken for 6-7 minutes per side until cooked through.
- In a separate bowl, mix cooked rice with diced avocado, cilantro, and lime zest.
- Slice the cooked chicken and stack it over the avocado rice mixture.
- Serve immediately.
Notes
For a spicier version, add chili flakes to the marinade. Ensure chicken reaches an internal temperature of 165Β°F.
