Description

Ingredients

  • 1 small seedless watermelon, cut into 3/4-inch cubes (about 4 cups)
  • 4 ounces feta cheese, crumbled
  • 2 to 3 tablespoons hot honey
  • 1/4 cup fresh mint leaves, torn or thinly sliced
  • Flaky sea salt, for serving (optional)
  • Fresh lime wedges, for serving (optional)

Instructions

  1. Cut the watermelon into 3/4-inch thick slices, then into cubes, removing any seeds. Pat the cubes dry with paper towels.
  2. Arrange the watermelon cubes on a serving platter or board.
  3. Drizzle the hot honey evenly over the watermelon cubes.
  4. Sprinkle with crumbled feta and torn mint leaves.
  5. If using, add a pinch of flaky sea salt and serve with lime wedges on the side. Serve immediately.

Notes

For best results, serve these bites immediately after assembling. Chilling after topping can make the watermelon weep and dilute the honey. Use a mild feta if you prefer a creamier bite, or substitute feta with fresh mozzarella pearls for a milder flavor.
