Ingredients

  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • 1/2 cup strawberry jam
  • 1 cup fresh strawberries, chopped

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat the softened butter and sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture and beat until combined.
  5. Gradually mix in the dry ingredients until a dough forms.
  6. In a separate bowl, beat the cream cheese until smooth, then fold in the strawberry jam and chopped strawberries.
  7. Scoop tablespoon-sized portions of the dough, flatten slightly, and add a dollop of the cream cheese mixture in the center.
  8. Bake for 12-15 minutes or until the edges are golden brown.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes
