  • 1/4 cup cilantro, chopped
  • Juice of 1 lime
  • For the honey lime cream:
  • 1/2 cup Greek yogurt
  • 2 tablespoons honey
  • Juice of 1 lime
  • 1 teaspoon lime zest

Instructions

  1. Prepare the chicken: In a bowl, coat the chicken thighs with jerk seasoning, olive oil, salt, and pepper. Let marinate for 15 minutes.
  2. Cook the chicken: Grill the chicken over medium heat for 6-8 minutes per side, or until fully cooked. Let rest, then slice.
  3. Make the mango slaw: In a large bowl, combine mangos, cabbage, red onion, and cilantro. Dress with lime juice and toss well.
  4. Prepare the honey lime cream: In a small bowl, whisk together Greek yogurt, honey, lime juice, and lime zest until smooth.
  5. Assemble the bowls: Divide the sliced chicken and mango slaw into bowls. Drizzle with honey lime cream and serve immediately.
