- 1/4 cup cilantro, chopped
- Juice of 1 lime
- For the honey lime cream:
- 1/2 cup Greek yogurt
- 2 tablespoons honey
- Juice of 1 lime
- 1 teaspoon lime zest
Instructions
- Prepare the chicken: In a bowl, coat the chicken thighs with jerk seasoning, olive oil, salt, and pepper. Let marinate for 15 minutes.
- Cook the chicken: Grill the chicken over medium heat for 6-8 minutes per side, or until fully cooked. Let rest, then slice.
- Make the mango slaw: In a large bowl, combine mangos, cabbage, red onion, and cilantro. Dress with lime juice and toss well.
- Prepare the honey lime cream: In a small bowl, whisk together Greek yogurt, honey, lime juice, and lime zest until smooth.
- Assemble the bowls: Divide the sliced chicken and mango slaw into bowls. Drizzle with honey lime cream and serve immediately.
