A quick and flavorful pasta dish featuring cheese tortellini tossed with roasted cherry tomatoes, fresh basil, lemon, and toasted pine nuts, then topped with creamy burrata cheese.

- 1 lb cheese tortellini
- 2 cups cherry tomatoes
- 3 tablespoons olive oil, divided
- Salt and freshly ground black pepper
- 2 cloves garlic, minced
- 1/4 cup pine nuts
- 1/4 cup fresh basil leaves, chopped
- Zest and juice of 1 lemon
- 8 oz burrata cheese
Instructions
- Preheat the oven to 400°F (200°C). On a baking sheet, toss the cherry tomatoes with 1 tablespoon olive oil, salt, and pepper. Roast for 15-20 minutes until blistered and slightly caramelized.
- Meanwhile, cook the tortellini according to package directions in salted boiling water. Drain and set aside.
- In a large skillet, toast the pine nuts over medium heat, stirring frequently, until golden and fragrant, about 2-3 minutes. Transfer to a plate.
- In the same skillet, add the remaining 2 tablespoons olive oil and the minced garlic. Cook for 1 minute until fragrant.
- Add the cooked tortellini, lemon zest, lemon juice, half of the basil, and the roasted cherry tomatoes (with any juices). Toss well to combine and heat through. Season with salt and pepper to taste.
- Serve the tortellini in bowls. Tear the burrata cheese over the top, sprinkle with the toasted pine nuts and remaining basil. Drizzle with a little extra olive oil if desired.
