Description

A bright and tangy sheet pan dinner with lemon, feta, and tender chicken breasts, all roasted together for an easy one-pan meal.


Ingredients

  • 4 boneless skinless chicken breasts (about 1.5 lbs)
  • 1 lemon, thinly sliced
  • 4 cloves garlic, minced
  • 1/3 cup olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pint cherry tomatoes
  • 1/2 cup crumbled feta cheese
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a large sheet pan.
  2. In a small bowl, whisk together olive oil, minced garlic, oregano, salt, and pepper.
  3. Place chicken breasts on one side of the sheet pan. Pour the oil mixture over the chicken and turn to coat evenly.
  4. Arrange lemon slices and cherry tomatoes around the chicken on the pan.
  5. Bake for 20 minutes.
  6. Remove pan from oven, sprinkle crumbled feta over the chicken and tomatoes.
  7. Return to oven and bake another 10 minutes, or until chicken is cooked through (internal temp 165°F) and tomatoes are blistered.
  8. Garnish with fresh parsley if desired. Serve immediately.

Notes

To make it a complete meal, add chopped broccoli or zucchini to the pan during the last 10 minutes of baking.
