Instructions

  1. Cook orzo according to package instructions until al dente, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add minced garlic and sauté for 1-2 minutes until fragrant.
  4. Add the shrimp and cook for 2-3 minutes per side until pink and opaque.
  5. Stir in the spinach, lemon juice, and zest; cook until spinach wilts.
  6. Add the cooked orzo to the skillet and toss everything together.
  7. Season with salt, pepper, and red pepper flakes if desired, then serve immediately.
