Description
A moist, buttery lemon poppy seed pound cake made with fresh lemon zest, full-fat sour cream, crunchy poppy seeds, and a simple fresh lemon glaze.Ingredients
For the Pound Cake:
- 1 cup (227 g) unsalted butter, softened to room temperature
- 1 1/4 cups (250 g) granulated sugar
- 3 large eggs, at room temperature
- 3 tablespoons (45 ml) finely grated fresh lemon zest
- 2 tablespoons (30 ml) poppy seeds
- 1 2/3 cups (242 g) all-purpose flour
- 2 teaspoons baking powder
- 3/4 teaspoon fine salt
- 1 cup (227 g) full-fat sour cream, at room temperature
For the Lemon Glaze:
- 1 cup (118 g) powdered sugar
- 2 tablespoons (30 ml) fresh lemon juice, plus a few drops only if needed
- Fresh lemon zest or a light sprinkle of poppy seeds, optional garnishInstructions
Make the Pound Cake:
1. Bring the butter, eggs, and sour cream to room temperature. Preheat the oven to 350°F (175°C). Grease a light-colored 9 × 5-inch loaf pan and line it with parchment paper.
2. Whisk the flour, baking powder, and salt together in a medium bowl.
3. Rub the lemon zest into the granulated sugar until the sugar smells strongly lemony and feels slightly damp.
4. Add the softened butter and beat with an electric mixer on medium-high speed for 5 to 7 minutes, until very pale, fluffy, and increased in volume. Scrape the bowl as needed.
5. Add the eggs one at a time, beating until smooth after each addition.
6. Mix in the poppy seeds. On low speed, add one-third of the flour mixture, then half of the sour cream. Repeat and finish with the remaining flour. Stop mixing while a few flour streaks remain, then fold gently with a spatula.
7. Spread the thick batter evenly in the prepared pan. Bake for about 55 minutes, beginning to check near 50 minutes. The cake is ready when the top is golden and a skewer inserted in the center comes out clean or with a few moist crumbs. Tent loosely with foil if the top browns too quickly.
8. Cool in the pan for 15 minutes, then lift the cake onto a wire rack and cool completely for about 1 hour.
Glaze the Cake:
1. Whisk the powdered sugar and 2 tablespoons of lemon juice until smooth, opaque, and thick but pourable. Add more lemon juice only a few drops at a time if needed.
2. Spoon the glaze over the completely cooled loaf. Add optional lemon zest or poppy seeds before the glaze sets. Slice after the glaze has formed a light crust.Notes
For the best rise, use room-temperature ingredients and cream the butter and sugar for the full 5 to 7 minutes. Weigh the flour when possible and mix only until combined after adding it. Use fresh poppy seeds; stale seeds can taste bitter. Freeze the loaf without glaze and add fresh glaze after thawing.Nutrition is an estimate based on 1 of 8 slices.
