Description

Ingredients

  • 4 large eggs
  • 1 cup fresh spinach
  • 1/2 avocado, sliced
  • 1/4 cup cherry tomatoes, halved
  • 2 slices bacon, cooked and crumbled
  • 1/4 cup shredded cheese
  • Salt and pepper to taste
  • Optional: 1 tablespoon olive oil for cooking

Instructions

  1. Heat a skillet over medium heat and add olive oil.
  2. Crack the eggs into the skillet and cook until desired doneness.
  3. In a bowl, layer the spinach as the base.
  4. Add the cooked eggs on top of the spinach.
  5. Top with sliced avocado, halved cherry tomatoes, crumbled bacon, and shredded cheese.
  6. Season with salt and pepper to taste.
  7. Serve immediately for the best flavor.

Notes

For a vegetarian version, omit the bacon and add mushrooms instead. Ensure eggs are fresh for optimal taste.
