Mango & Mascarpone Sunset Skewers

Description

Tropical skewers with ripe mango, creamy mascarpone, and a hint of lime and honey, drizzled with a sunset glaze. Perfect for summer entertaining.


Ingredients

  • 2 large ripe mangoes, peeled and cut into 1-inch cubes
  • 8 oz mascarpone cheese, softened
  • 2 tbsp honey
  • 1 tbsp lime juice
  • 1 tsp lime zest
  • 1/4 cup shredded coconut, toasted
  • Wooden skewers, soaked in water for 30 minutes
  • For the sunset glaze:
  • 1/4 cup orange juice
  • 2 tbsp honey
  • 1 tbsp lime juice
  • 1 tsp grated fresh ginger
  • Pinch of cayenne pepper

Instructions

  1. 1. In a small bowl, whisk together mascarpone, honey, lime juice, and lime zest until smooth. Set aside.
  2. 2. In another bowl, prepare the sunset glaze: whisk orange juice, honey, lime juice, ginger, and cayenne. Set aside.
  3. 3. Thread mango cubes onto skewers, leaving a small gap at the top.
  4. 4. Grill skewers over medium-high heat for 3-4 minutes, turning once, until mango is slightly charred and caramelized.
  5. 5. Remove from grill. Drizzle each skewer with the mascarpone mixture, then top with a drizzle of sunset glaze and a sprinkle of toasted coconut.
  6. 6. Serve immediately.

Notes

For a non-alcoholic version, skip the rum suggested in some variations. You can also add a splash of dark rum to the glaze for an adult twist. If you don’t have a grill, broil the skewers in the oven for 2-3 minutes per side.
