Description

Sweet and savory caramelized sweet potatoes roasted to perfection, then finished with a rich maple glaze, crumbled feta, and toasted crunchy walnuts. A perfect side dish for any occasion.


Ingredients

  • 4 medium sweet potatoes, peeled and cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon ground cinnamon
  • 3 tablespoons pure maple syrup
  • 1 tablespoon unsalted butter, melted
  • 3/4 cup crumbled feta cheese
  • 1/2 cup walnuts, roughly chopped and toasted

Instructions

  1. Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper.
  2. In a large bowl, toss sweet potato cubes with olive oil, salt, pepper, and cinnamon until well coated.
  3. Spread sweet potatoes in a single layer on the prepared baking sheet. Roast for 20-25 minutes, flipping halfway, until tender and caramelized at the edges.
  4. While sweet potatoes roast, whisk together maple syrup and melted butter in a small bowl.
  5. Remove sweet potatoes from oven and immediately drizzle with maple-butter mixture, tossing gently to coat.
  6. Transfer sweet potatoes to a serving dish. Sprinkle with crumbled feta and toasted walnuts. Serve warm.

Notes

To toast walnuts, place them in a dry skillet over medium heat for 3-5 minutes, stirring frequently, until fragrant. For a vegan version, omit the feta or use a plant-based substitute, and use coconut oil instead of butter.
