- 2 boneless, skinless chicken breasts
- 1 pound pasta (such as fettuccine or penne)
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 4 garlic cloves, minced
- 1 teaspoon dried thyme
- 1 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- 2 tablespoons olive oil
- Fresh basil for garnish
Instructions
- Cook the pasta according to package instructions until al dente; drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Season chicken breasts with salt, pepper, and thyme, then cook in the skillet for 6-7 minutes per side until golden and cooked through; remove and slice.
- In the same skillet, add minced garlic and red pepper flakes; sauté for 1 minute until fragrant.
- Pour in chicken broth and heavy cream, stirring to combine; simmer for 3-4 minutes until the sauce thickens.
- Stir in grated Parmesan cheese until melted and smooth.
- Add the sliced chicken back to the skillet and toss with the sauce.
- Mix in the cooked pasta, coating evenly.
- Garnish with fresh basil before serving.
Notes
This dish is best served fresh, but leftovers can be refrigerated for up to 2 days. For a lighter version, substitute half-and-half for heavy cream.
