Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 pound pasta (such as fettuccine or penne)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 4 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • Fresh basil for garnish

Instructions

  1. Cook the pasta according to package instructions until al dente; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Season chicken breasts with salt, pepper, and thyme, then cook in the skillet for 6-7 minutes per side until golden and cooked through; remove and slice.
  4. In the same skillet, add minced garlic and red pepper flakes; sauté for 1 minute until fragrant.
  5. Pour in chicken broth and heavy cream, stirring to combine; simmer for 3-4 minutes until the sauce thickens.
  6. Stir in grated Parmesan cheese until melted and smooth.
  7. Add the sliced chicken back to the skillet and toss with the sauce.
  8. Mix in the cooked pasta, coating evenly.
  9. Garnish with fresh basil before serving.

Notes

This dish is best served fresh, but leftovers can be refrigerated for up to 2 days. For a lighter version, substitute half-and-half for heavy cream.
