Description

Flavorful chicken skewers marinated in a blend of Mediterranean spices, grilled to perfection, and served with a creamy homemade hummus spread. Perfect for a light and healthy meal.

  • For the Chicken Skewers:
  • 1 lb boneless skinless chicken breasts, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 810 wooden or metal skewers (if wooden, soak in water 30 minutes)
  • For the Hummus Spread:
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/4 cup tahini
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cumin
  • 23 tablespoons water (to thin)
  • Optional garnish: chopped fresh parsley, drizzle of olive oil

Instructions

  1. 1. In a large bowl, whisk together olive oil, lemon juice, minced garlic, cumin, paprika, oregano, salt, and pepper. Add chicken cubes and toss to coat. Cover and refrigerate for at least 30 minutes (or up to 2 hours).
  2. 2. While chicken marinates, prepare the hummus: In a food processor, combine chickpeas, tahini, lemon juice, olive oil, garlic, salt, and cumin. Process until smooth, scraping down sides as needed. With motor running, add water 1 tablespoon at a time until desired consistency is reached. Transfer to a bowl and set aside.
  3. 3. Thread marinated chicken cubes onto skewers, dividing evenly. Preheat grill or grill pan to medium-high heat.
  4. 4. Grill skewers, turning occasionally, until chicken is cooked through and has nice char marks, about 10-12 minutes (internal temperature reaches 165Β°F).
  5. 5. Serve chicken skewers warm with the prepared hummus spread. Garnish with parsley and a drizzle of olive oil if desired.

Notes

For best flavor, marinate the chicken overnight. If using wooden skewers, soak them in water for 30 minutes to prevent burning. You can also add cherry tomatoes and red onion chunks to the skewers for extra color and taste. Leftover hummus keeps in the refrigerator for up to 5 days.
