Description

These Mediterranean Meatball Rice Bowls are loaded with juicy herb-spiced meatballs, fluffy rice, cool and creamy tzatziki, and fresh crunchy veggies. An easy and delicious meal prep lunch or dinner!


Ingredients

  • For the meatballs:
  • 1 lb ground beef
  • 1/2 cup panko breadcrumbs
  • 1/4 cup chopped fresh parsley
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil, for frying
  • For the rice bowls:
  • 3 cups cooked white or brown rice
  • 1 cup tzatziki sauce
  • 1/2 cup diced cucumber
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons finely chopped red onion
  • 1 tablespoon chopped fresh dill
  • Lemon wedges, for serving

Instructions

  1. Cook the rice according to package instructions and set aside.
  2. Make the meatballs: In a large bowl, mix together the ground beef, panko breadcrumbs, parsley, egg, garlic, oregano, cumin, salt, and black pepper until just combined. Roll into 1 1/2-inch meatballs.
  3. Heat olive oil in a large nonstick skillet over medium-high heat. Add the meatballs in a single layer and cook, turning occasionally, until browned on all sides and cooked through, about 10 to 12 minutes. Remove from the skillet and keep warm.
  4. Assemble the bowls: Divide the cooked rice among 4 bowls. Top with the meatballs, tzatziki sauce, cucumber, cherry tomatoes, feta cheese, red onion, and fresh dill.
  5. Serve immediately with lemon wedges on the side.

Notes

For a lighter version, use ground turkey in place of ground beef. Add chopped Kalamata olives or roasted red peppers for extra Mediterranean flavor. Store leftovers in an airtight container in the refrigerator for up to 4 days; keep the tzatziki separate until serving.
