This Mediterranean Stuffed Zucchini recipe features hollowed-out zucchinis filled with a flavorful mixture of ground meat, tomatoes, herbs, and cheese, baked to perfection.

- 4 medium zucchinis, halved and scooped out
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1/2 pound ground lamb or beef
- 1 cup diced tomatoes
- 1/2 cup cooked rice
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
- 1/2 cup feta cheese, crumbled
Instructions
- Preheat the oven to 375Β°F (190Β°C).
- In a large skillet, heat olive oil over medium heat. Add onion and garlic, and sautΓ© until softened.
- Add ground meat, cooking until browned. Drain any excess fat.
- Stir in diced tomatoes, cooked rice, oregano, cumin, salt, and pepper. Cook for 5 minutes.
- Spoon the mixture into the hollowed-out zucchinis and place them in a baking dish.
- Sprinkle with feta cheese and bake for 25-30 minutes, until zucchinis are tender.
- Remove from oven and let cool slightly before serving.
Notes
For a vegetarian version, substitute ground meat with chickpeas or mushrooms. Ensure zucchinis are not overcooked to maintain texture.
