Description

This Mediterranean Stuffed Zucchini recipe features hollowed-out zucchinis filled with a flavorful mixture of ground meat, tomatoes, herbs, and cheese, baked to perfection.


Ingredients

  • 4 medium zucchinis, halved and scooped out
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1/2 pound ground lamb or beef
  • 1 cup diced tomatoes
  • 1/2 cup cooked rice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 1/2 cup feta cheese, crumbled

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic, and sauté until softened.
  3. Add ground meat, cooking until browned. Drain any excess fat.
  4. Stir in diced tomatoes, cooked rice, oregano, cumin, salt, and pepper. Cook for 5 minutes.
  5. Spoon the mixture into the hollowed-out zucchinis and place them in a baking dish.
  6. Sprinkle with feta cheese and bake for 25-30 minutes, until zucchinis are tender.
  7. Remove from oven and let cool slightly before serving.

Notes

For a vegetarian version, substitute ground meat with chickpeas or mushrooms. Ensure zucchinis are not overcooked to maintain texture.
