Description

A classic Southern pie from Kentucky featuring a sweet, crumbly filling that resembles sawdust, made with simple ingredients for a nostalgic treat.


Ingredients

  • 1 unbaked 9-inch pie crust
  • 1 1/2 cups granulated sugar
  • 1 1/2 cups finely crushed saltine crackers
  • 1 1/2 cups sweetened flaked coconut
  • 1 1/2 cups chopped pecans
  • 6 large egg whites
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. In a large bowl, combine the sugar, crushed crackers, coconut, and pecans.
  3. In a separate bowl, beat the egg whites until stiff peaks form, then fold in the vanilla extract.
  4. Gently fold the egg white mixture into the dry ingredients until just combined.
  5. Pour the mixture into the unbaked pie crust.
  6. Bake in the preheated oven for 30-35 minutes, or until the top is golden and set.
  7. Allow the pie to cool completely before serving.

Notes

This pie is best served chilled and can be stored in the refrigerator for up to 3 days. For a variation, add a dash of cinnamon to the filling.
