- 3 medium zucchinis, sliced into rounds
- 1 cup cherry tomatoes, halved
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and freshly ground black pepper, to taste
- Fresh basil leaves, for garnish
Instructions
- Preheat your oven to 400°F (200°C). Grease a large baking pan or oven-safe skillet lightly with olive oil.
- Arrange the zucchini slices and cherry tomato halves in a single layer in the prepared pan.
- In a small bowl, mix together the minced garlic, olive oil, oregano, salt, and pepper. Drizzle the mixture evenly over the vegetables.
- Sprinkle the shredded mozzarella and grated Parmesan cheese over the top.
- Bake for 25 to 30 minutes, or until the cheese is melted and bubbly and the zucchini is tender.
- Remove from the oven and let rest for 5 minutes. Garnish with fresh basil leaves before serving.
Notes
For a bit of heat, add red pepper flakes before baking. This dish pairs well with crusty bread or grilled chicken.
