Description

This easy one-pan meal features chicken and vegetables cooked in a balsamic glaze for a flavorful and healthy dinner.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh broccoli florets
  • 1 cup cherry tomatoes
  • 1 red bell pepper, sliced
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. In a large bowl, whisk together balsamic vinegar, olive oil, garlic, salt, and pepper.
  3. Add chicken breasts, broccoli, cherry tomatoes, and bell pepper to the bowl and toss to coat evenly.
  4. Spread the mixture on a large baking sheet.
  5. Bake in the preheated oven for 20-25 minutes, or until chicken is cooked through and vegetables are tender.
