- 1 cup walnut halves
- 2 tablespoons honey
- 1/2 teaspoon sea salt
- 1/4 teaspoon cayenne pepper
- 1 large bag (about 10 oz) thick-cut tortilla chips
- 8 oz brie cheese, rind removed and sliced into thin pieces
- 2 ripe pears (such as Bartlett or Anjou), thinly sliced
- 1/2 cup dried cranberries
- 1/3 cup hot honey (store-bought or homemade)
- Fresh thyme leaves for garnish
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Make the walnut crunch: In a small bowl, mix walnut halves with honey, sea salt, and cayenne pepper until well coated. Spread on the prepared baking sheet and bake for 8-10 minutes, until golden and fragrant. Let cool, then roughly chop.
- Increase oven temperature to 400°F (200°C). Line a large rimmed baking sheet with foil or parchment.
- Arrange tortilla chips in an even layer on the baking sheet. Top with slices of brie cheese and pear slices, distributing evenly.
- Bake for 5-7 minutes, until cheese is melted and bubbly.
- Remove from oven and sprinkle with walnut crunch and dried cranberries. Drizzle with hot honey and garnish with fresh thyme leaves. Serve immediately.
Notes
If using homemade hot honey, combine 1/2 cup honey with 1-2 teaspoons red pepper flakes and warm gently. Let steep for 10 minutes before using.
