- 1 ripe pineapple, peeled, cored, and diced
- 1/4 cup hot honey
- 1/2 cup all-purpose flour
- 1/2 cup rolled oats
- 1/4 cup brown sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 cup cold butter, cubed
- Vanilla ice cream for serving (optional)
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, toss diced pineapple with 2 tablespoons hot honey. Spread in a baking dish.
- In another bowl, combine flour, oats, brown sugar, cinnamon, and salt. Cut in butter until mixture resembles coarse crumbs.
- Sprinkle topping over pineapple. Bake for 25-30 minutes until golden and bubbly.
- Drizzle remaining hot honey over top before serving. Serve warm with ice cream if desired.
Notes
Hot honey can be substituted with regular honey mixed with a pinch of cayenne pepper. For extra crunch, add chopped pecans to the topping.
