  • 1 wheel (8 ounces) Brie cheese, chilled
  • 1/2 cup shelled pistachios, finely chopped
  • 1/2 cup fresh raspberries
  • 2 tablespoons honey
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon lemon juice
  • Salt to taste
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Cut the chilled Brie into 1-inch cubes (about 16 pieces).
  3. Place chopped pistachios in a shallow bowl. Roll each Brie cube in pistachios, pressing gently to adhere.
  4. Arrange coated Brie bites on the prepared baking sheet. Bake for 5-7 minutes until Brie is soft but still holds its shape.
  5. Meanwhile, make the glaze: In a small saucepan, combine raspberries, honey, balsamic vinegar, and lemon juice. Cook over medium heat, stirring occasionally, until raspberries break down and mixture thickens slightly (about 5 minutes). Strain through a fine-mesh sieve to remove seeds. Season with salt to taste.
  6. Remove Brie bites from oven and let cool for 2 minutes. Transfer to a serving platter.
  7. Drizzle raspberry honey glaze over the warm Brie bites. Garnish with fresh mint if desired. Serve immediately.

Notes

For best results, use a ripe but firm Brie. You can prepare the glaze up to 1 day ahead and refrigerate; reheat gently before serving. If you prefer a spicier kick, add a pinch of red pepper flakes to the glaze.
