- 2 large eggs
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- Salt and pepper to taste
Instructions
- Heat oil in a large pan over medium heat.
- Add minced garlic and sauté until fragrant.
- Add mixed vegetables and cook for 2-3 minutes.
- Push vegetables to the side and crack eggs into the pan, scrambling them.
- Add cooked rice and soy sauce, stirring everything together.
- Season with salt and pepper, and cook for another 2 minutes.
- Serve hot.
Notes
For best results, use day-old rice to prevent it from becoming mushy. Adjust soy sauce according to taste.
