Description

A delightful stack of roasted beets topped with feta cheese and drizzled with a sweet honey balsamic glaze.


Ingredients

  • 4 medium beets, washed and trimmed
  • 200g feta cheese, crumbled
  • 2 tablespoons honey
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs for garnish

Instructions

  1. Preheat the oven to 400Β°F (200Β°C).
  2. Wrap each beet in foil and roast for 45-50 minutes until tender.
  3. Allow beets to cool, then peel and slice into rounds.
  4. In a small bowl, whisk together honey, balsamic vinegar, olive oil, salt, and pepper.
  5. On a plate, stack the beet slices alternately with crumbled feta.
  6. Drizzle the honey balsamic glaze over the stacks.
  7. Garnish with fresh herbs and serve immediately.

Notes

For best results, use fresh beets and high-quality balsamic vinegar. This dish pairs well with a light salad.
