- 4 medium beets, washed and trimmed
- 200g feta cheese, crumbled
- 2 tablespoons honey
- 1 tablespoon balsamic vinegar
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh herbs for garnish
Instructions
- Preheat the oven to 400Β°F (200Β°C).
- Wrap each beet in foil and roast for 45-50 minutes until tender.
- Allow beets to cool, then peel and slice into rounds.
- In a small bowl, whisk together honey, balsamic vinegar, olive oil, salt, and pepper.
- On a plate, stack the beet slices alternately with crumbled feta.
- Drizzle the honey balsamic glaze over the stacks.
- Garnish with fresh herbs and serve immediately.
Notes
For best results, use fresh beets and high-quality balsamic vinegar. This dish pairs well with a light salad.
