- 2 pounds carrots, peeled and cut into 2-inch pieces
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup ricotta cheese
- 2 tablespoons honey
- 1 teaspoon red pepper flakes
Instructions
- Preheat the oven to 425Β°F.
- Toss the carrots with olive oil, salt, and pepper on a baking sheet.
- Roast in the oven for 20-25 minutes, or until carrots are tender and caramelized.
- In a bowl, whip the ricotta cheese until smooth and creamy.
- Drizzle the hot honey mixture (honey mixed with red pepper flakes) over the roasted carrots.
- Top with the whipped ricotta and serve immediately.
Notes
For a milder version, reduce the amount of red pepper flakes. Store leftovers in an airtight container for up to 2 days.
