Description

Sweet roasted carrots are combined with creamy whipped ricotta and a spicy hot honey drizzle for a flavorful side dish.


Ingredients

  • 2 pounds carrots, peeled and cut into 2-inch pieces
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup ricotta cheese
  • 2 tablespoons honey
  • 1 teaspoon red pepper flakes

Instructions

  1. Preheat the oven to 425Β°F.
  2. Toss the carrots with olive oil, salt, and pepper on a baking sheet.
  3. Roast in the oven for 20-25 minutes, or until carrots are tender and caramelized.
  4. In a bowl, whip the ricotta cheese until smooth and creamy.
  5. Drizzle the hot honey mixture (honey mixed with red pepper flakes) over the roasted carrots.
  6. Top with the whipped ricotta and serve immediately.

Notes

For a milder version, reduce the amount of red pepper flakes. Store leftovers in an airtight container for up to 2 days.
