Ingredients

  • 1 cup whole milk ricotta cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 cup honey
  • 1 teaspoon red pepper flakes
  • 1 garlic clove, minced
  • Fresh herbs for garnish, such as parsley or mint

Instructions

  1. Preheat the oven to 425Β°F and line a baking sheet with parchment paper.
  2. Toss the carrots with olive oil, salt, and pepper until evenly coated.
  3. Roast the carrots in the oven for 20-25 minutes, or until tender and slightly caramelized.
  4. While the carrots are roasting, whip the ricotta cheese in a bowl until smooth and creamy.
  5. In a small saucepan, heat the honey and red pepper flakes over low heat for 2-3 minutes to infuse the flavors.
  6. Spread the whipped ricotta on a serving platter, arrange the roasted carrots on top, and drizzle with the hot honey mixture.

Notes

For a milder version, reduce the red pepper flakes to 1/2 teaspoon. Ensure carrots are evenly sized for consistent roasting.
