Instructions
- Preheat the oven to 425Β°F and line a baking sheet with parchment paper.
- Toss the carrots with olive oil, salt, and pepper until evenly coated.

- While the carrots are roasting, whip the ricotta cheese in a bowl until smooth and creamy.

Notes
For a milder version, reduce the red pepper flakes to 1/2 teaspoon. Ensure carrots are evenly sized for consistent roasting.
