Roasted Cranberry and Goat Cheese Flatbread

Description

A delightful flatbread featuring roasted cranberries and creamy goat cheese, finished with fresh herbs and a drizzle of honey.


Ingredients

  • 1 pound pizza dough (store-bought or homemade)
  • 2 cups fresh or frozen cranberries
  • 2 tablespoons olive oil, divided
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons honey, plus more for drizzling
  • Salt and freshly ground black pepper to taste
  • 4 ounces goat cheese, crumbled
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme leaves
  • 1/4 cup chopped pecans or walnuts (optional)
  • 1/4 cup arugula (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, toss cranberries with 1 tablespoon olive oil, balsamic vinegar, honey, salt, and pepper. Spread in a single layer on a small baking dish and roast for 15–20 minutes until cranberries burst and soften. Set aside.
  3. Increase oven temperature to 450°F (230°C). Stretch or roll out pizza dough into a rectangle or oval about 1/4-inch thick. Place on the prepared baking sheet and brush with remaining 1 tablespoon olive oil.
  4. Bake the dough for 10–12 minutes until lightly golden and starting to crisp.
  5. Remove from oven and top evenly with roasted cranberries, crumbled goat cheese, and mozzarella. Sprinkle with rosemary and thyme.
  6. Return to oven and bake for 8–10 more minutes until cheese is melted and edges are golden brown.
  7. Remove from oven, drizzle with additional honey, and sprinkle with chopped nuts if using. Top with fresh arugula.
  8. Slice and serve warm.

Notes

For a shortcut, use naan or pre-baked flatbread crusts – adjust baking time accordingly. Cranberries can be substituted with fresh figs or sliced apples.
