Description
A delightful flatbread featuring roasted cranberries and creamy goat cheese, finished with fresh herbs and a drizzle of honey.

- 1 pound pizza dough (store-bought or homemade)
- 2 cups fresh or frozen cranberries
- 2 tablespoons olive oil, divided
- 2 tablespoons balsamic vinegar
- 2 tablespoons honey, plus more for drizzling
- Salt and freshly ground black pepper to taste
- 4 ounces goat cheese, crumbled
- 1/2 cup shredded mozzarella cheese
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme leaves
- 1/4 cup chopped pecans or walnuts (optional)
- 1/4 cup arugula (for garnish)
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, toss cranberries with 1 tablespoon olive oil, balsamic vinegar, honey, salt, and pepper. Spread in a single layer on a small baking dish and roast for 15–20 minutes until cranberries burst and soften. Set aside.
- Increase oven temperature to 450°F (230°C). Stretch or roll out pizza dough into a rectangle or oval about 1/4-inch thick. Place on the prepared baking sheet and brush with remaining 1 tablespoon olive oil.
- Bake the dough for 10–12 minutes until lightly golden and starting to crisp.
- Remove from oven and top evenly with roasted cranberries, crumbled goat cheese, and mozzarella. Sprinkle with rosemary and thyme.
- Return to oven and bake for 8–10 more minutes until cheese is melted and edges are golden brown.
- Remove from oven, drizzle with additional honey, and sprinkle with chopped nuts if using. Top with fresh arugula.
- Slice and serve warm.
Notes
For a shortcut, use naan or pre-baked flatbread crusts – adjust baking time accordingly. Cranberries can be substituted with fresh figs or sliced apples.
