Instructions
- Preheat your oven to 350Β°F (175Β°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
- In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the peanut butter, eggs, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Stir in the oats, chocolate chips, and chopped peanuts.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are golden brown.
- Allow the cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
Notes
For a chewier texture, slightly underbake the cookies. Store in an airtight container for up to 5 days.
