- 1 pound smoked sausage, sliced
- 2 medium sweet potatoes, peeled and cubed
- 1 red bell pepper, sliced
- 1 onion, sliced
- 3 tablespoons olive oil
- Salt and pepper to taste
- For the honey garlic sauce:
- 1/4 cup honey
- 4 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon apple cider vinegar
Instructions
- Preheat oven to 400Β°F (200Β°C). Line a sheet pan with parchment paper.
- In a large bowl, toss the sweet potatoes, sausage, bell pepper, and onion with olive oil, salt, and pepper.
- Spread the mixture evenly on the prepared sheet pan.
- In a small bowl, whisk together honey, garlic, soy sauce, and apple cider vinegar.
- Drizzle the honey garlic sauce over the sheet pan ingredients.
- Bake for 25-30 minutes, stirring halfway through, until sweet potatoes are tender and sausage is browned.
- Serve hot and enjoy!
Notes
For a spicier version, add red pepper flakes to the sauce. Ensure vegetables are cut uniformly for even cooking.
