- 1 pound large shrimp, peeled and deveined
- 2 ripe avocados, diced
- 1 mango, peeled and diced
- 1 red bell pepper, diced
- 1/4 red onion, finely chopped
- 2 tablespoons fresh cilantro, chopped
- Juice of 2 limes
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional: 1 jalapeΓ±o, seeded and minced
Instructions
- In a bowl, combine diced mango, red bell pepper, red onion, cilantro, jalapeΓ±o (if using), and juice from one lime. Season with salt and pepper, then set aside as the salsa.
- Toss the shrimp with olive oil, juice from the other lime, salt, and pepper in a separate bowl.
- Heat a grill or skillet over medium-high heat. Cook the shrimp for 2-3 minutes per side until pink and opaque.
- Halve the avocados and remove the pits. Scoop out a bit of the flesh to create bowls if desired, then fill each avocado half with the mango salsa and top with grilled shrimp.
- Serve immediately, garnished with extra cilantro if desired.
Notes
For a spicier version, add more jalapeΓ±o or use a serrano pepper. This recipe is best enjoyed fresh.
