Shrimp Avocado Bowls with Mango Salsa

Description

A refreshing and healthy dish featuring grilled shrimp, creamy avocado, and sweet mango salsa, perfect for a light meal.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1 mango, peeled and diced
  • 1 red bell pepper, diced
  • 1/4 red onion, finely chopped
  • 2 tablespoons fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: 1 jalapeΓ±o, seeded and minced

Instructions

  1. In a bowl, combine diced mango, red bell pepper, red onion, cilantro, jalapeΓ±o (if using), and juice from one lime. Season with salt and pepper, then set aside as the salsa.
  2. Toss the shrimp with olive oil, juice from the other lime, salt, and pepper in a separate bowl.
  3. Heat a grill or skillet over medium-high heat. Cook the shrimp for 2-3 minutes per side until pink and opaque.
  4. Halve the avocados and remove the pits. Scoop out a bit of the flesh to create bowls if desired, then fill each avocado half with the mango salsa and top with grilled shrimp.
  5. Serve immediately, garnished with extra cilantro if desired.

Notes

For a spicier version, add more jalapeΓ±o or use a serrano pepper. This recipe is best enjoyed fresh.
