Description

A luxurious pasta dish featuring homemade ravioli filled with shrimp and lobster, tossed in a creamy, dreamy sauce.


Ingredients

  • 2 cups all-purpose flour
  • 1 large egg
  • 1/2 cup water
  • 8 oz shrimp, peeled and deveined
  • 8 oz lobster meat, chopped
  • 1/4 cup ricotta cheese
  • 1/4 cup Parmesan cheese, grated
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup white wine
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large bowl, mix flour and egg to form dough, adding water as needed. Knead until smooth and let rest for 30 minutes.
  2. For the filling, combine shrimp, lobster, ricotta, and Parmesan in a food processor and pulse until smooth.
  3. Roll out the dough thinly and cut into squares. Place a spoonful of filling in the center of each square, fold into ravioli shapes, and seal edges.
  4. Boil a pot of salted water and cook ravioli for 4-5 minutes until they float.
  5. In a saucepan, heat olive oil and sautΓ© garlic until fragrant. Add white wine and reduce by half.
  6. Stir in heavy cream, salt, and pepper, and simmer for 5 minutes until thickened.
  7. Toss cooked ravioli in the creamy sauce and garnish with fresh parsley.

Notes

Use fresh seafood for the best flavor; pair with a crisp white wine.
