- 2 cups all-purpose flour
- 1 large egg
- 1/2 cup water
- 8 oz shrimp, peeled and deveined
- 8 oz lobster meat, chopped
- 1/4 cup ricotta cheese
- 1/4 cup Parmesan cheese, grated
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup white wine
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large bowl, mix flour and egg to form dough, adding water as needed. Knead until smooth and let rest for 30 minutes.
- For the filling, combine shrimp, lobster, ricotta, and Parmesan in a food processor and pulse until smooth.
- Roll out the dough thinly and cut into squares. Place a spoonful of filling in the center of each square, fold into ravioli shapes, and seal edges.
- Boil a pot of salted water and cook ravioli for 4-5 minutes until they float.
- In a saucepan, heat olive oil and sautΓ© garlic until fragrant. Add white wine and reduce by half.
- Stir in heavy cream, salt, and pepper, and simmer for 5 minutes until thickened.
- Toss cooked ravioli in the creamy sauce and garnish with fresh parsley.

Use fresh seafood for the best flavor; pair with a crisp white wine.
