Description
These rustic skillet chicken patties are smothered in a rich garlic tomato gravy, perfect for a comforting dinner.

- For the patties:
- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1 large egg
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 1/2 tsp salt
- 1/4 tsp black pepper
- For the gravy:
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 can (14 oz) crushed tomatoes
- 1/2 cup chicken broth
- 1 tsp dried basil
- 1/2 tsp sugar
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a bowl, combine ground chicken, breadcrumbs, egg, minced garlic, Parmesan, salt, and pepper. Mix until well combined.
- Form the mixture into 4 to 6 patties.
- Heat olive oil in a large skillet over medium heat. Cook patties for 4-5 minutes per side until golden brown and cooked through. Remove and set aside.
- In the same skillet, add a little more oil if needed. Sauté the minced garlic for 30 seconds until fragrant.
- Add crushed tomatoes, chicken broth, basil, sugar, salt, and pepper. Stir and bring to a simmer.
- Return the patties to the skillet, spoon gravy over them. Cover and simmer for 10 minutes.
- Garnish with fresh parsley and serve.
Notes
Can be served over rice, pasta, or with crusty bread.
