Ingredients

  • 4 bone-in, skin-on chicken thighs (about 1.5 lbs)
  • 2 tablespoons olive oil
  • 6 large shallots, thinly sliced
  • 3 cloves garlic, minced
  • 1/2 cup balsamic vinegar
  • 1 cup chicken broth (low sodium)
  • 2 tablespoons honey
  • 2 sprigs fresh rosemary
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon butter (optional, for finishing)

Instructions

  1. Preheat oven to 300°F (150°C).
  2. Season chicken thighs generously with salt and pepper on both sides.
  3. Heat olive oil in a large oven-safe skillet or Dutch oven over medium-high heat. Place chicken skin-side down and sear until golden brown, about 4-5 minutes. Flip and sear the other side for 2-3 minutes. Remove chicken and set aside.
  4. Reduce heat to medium. Add sliced shallots to the skillet and cook, stirring occasionally, until they are softened and caramelized, about 8-10 minutes. Add minced garlic and cook for 1 minute more.
  5. Pour in balsamic vinegar and deglaze the pan, scraping up any browned bits. Let it bubble and reduce slightly, about 2 minutes.
  6. Stir in chicken broth and honey, then add the fresh rosemary sprigs. Bring to a simmer.
  7. Return the chicken thighs to the skillet, skin-side up, nestling them into the liquid. Spoon some of the sauce over the chicken.
  8. Cover the skillet with a tight-fitting lid or transfer to the preheated oven. Braise for 1 hour 15 minutes, until chicken is very tender and cooked through.
  9. Remove from oven. For a richer sauce, transfer chicken to a plate and stir in butter until melted. Adjust seasoning with salt and pepper.
  10. Serve chicken with the caramelized shallots and sauce spooned on top.

Notes

For best results, use a good quality aged balsamic vinegar. The dish can be prepared a day ahead; reheat gently before serving.
