Description

A creamy and spicy soup made with potatoes, Cajun seasoning, and slow-cooked for rich flavors.


Ingredients

  • 2 pounds russet potatoes, peeled and diced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon Cajun seasoning
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 pound andouille sausage, sliced
  • Salt and pepper to taste
  • Optional: 1 bell pepper, diced

Instructions

  1. Place the diced potatoes, chopped onion, minced garlic, Cajun seasoning, and sliced sausage into the slow cooker.
  2. Pour in the chicken broth and stir to combine.
  3. Cover and cook on low for 6-8 hours, or until potatoes are tender.
  4. Use an immersion blender to puree the soup to your desired consistency.
  5. Stir in the heavy cream and season with salt and pepper.
  6. Serve hot, garnished with fresh herbs if desired.

Notes

For a vegetarian version, substitute vegetable broth and omit the sausage. Adjust spiciness by varying the Cajun seasoning.
