Description
A hearty and comforting dish made with tender chicken, vegetables, and fluffy dumplings cooked in a slow cooker.
Ingredients

- 2 pounds boneless, skinless chicken breasts
- 4 cups chicken broth
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 cups biscuit mix
- 2/3 cup milk
Instructions
- Place chicken breasts in the bottom of the slow cooker.
- Add chopped onion, carrots, celery, garlic powder, thyme, salt, and pepper.
- Pour chicken broth over the ingredients.
- Cover and cook on low for 6-7 hours or until chicken is tender.
- In a bowl, mix biscuit mix and milk to form dough.
- Drop spoonfuls of dough on top of the chicken mixture in the slow cooker.
- Cover and cook on high for an additional 30-45 minutes until dumplings are cooked through.
- Shred chicken if desired and serve hot.
Notes
For a thicker broth, you can add a slurry of flour and water towards the end. This recipe is freezer-friendly.
