Slow Cooker Chicken and Dumplings

Description

A hearty and comforting dish made with tender chicken, vegetables, and fluffy dumplings cooked in a slow cooker.


Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 cups biscuit mix
  • 2/3 cup milk

Instructions

  1. Place chicken breasts in the bottom of the slow cooker.
  2. Add chopped onion, carrots, celery, garlic powder, thyme, salt, and pepper.
  3. Pour chicken broth over the ingredients.
  4. Cover and cook on low for 6-7 hours or until chicken is tender.
  5. In a bowl, mix biscuit mix and milk to form dough.
  6. Drop spoonfuls of dough on top of the chicken mixture in the slow cooker.
  7. Cover and cook on high for an additional 30-45 minutes until dumplings are cooked through.
  8. Shred chicken if desired and serve hot.

Notes

For a thicker broth, you can add a slurry of flour and water towards the end. This recipe is freezer-friendly.
