Description

These soft and gooey mint chocolate chip cookies are packed with fresh mint flavor and melty chocolate chips, making them your new favorite sweet treat.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 teaspoon mint extract
  • 2 cups mint chocolate chips

Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C).
  2. In a small bowl, stir together flour, baking soda, and salt; set aside.
  3. In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
  4. Beat in the vanilla extract, mint extract, and eggs one at a time.
  5. Gradually stir in the flour mixture until just blended.
  6. Fold in the mint chocolate chips.
  7. Drop rounded spoonfuls of dough onto ungreased baking sheets.
  8. Bake for 8 to 10 minutes in the preheated oven, or until golden brown.
  9. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For extra gooeyness, underbake the cookies by 1-2 minutes. Store in an airtight container for up to 5 days.
