Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup buttermilk
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 2 jalapeños, finely chopped
  • 1/4 cup honey
  • Zest and juice of 1 lime

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a 9-inch baking pan.
  2. In a large bowl, whisk together cornmeal, flour, baking powder, and salt.
  3. In another bowl, mix buttermilk, eggs, and melted butter until combined.
  4. Stir the wet ingredients into the dry ingredients until just mixed, then fold in chopped jalapeños.
  5. Pour the batter into the prepared pan and bake for 20-25 minutes, or until a toothpick inserted comes out clean.
  6. While the cornbread bakes, prepare the sweet lime honey by mixing honey, lime zest, and lime juice in a small bowl.
  7. Once baked, remove from oven and drizzle with the sweet lime honey mixture. Let cool slightly before serving.

Notes

For extra spice, add more jalapeños or include seeds. Pairs well with chili or barbecue.
