Ingredients

- 2 salmon fillets (about 6 oz each)
- 1 cup cooked rice
- 1 tablespoon soy sauce
- 1 tablespoon sriracha sauce
- 1 teaspoon honey
- 1 avocado, sliced
- 1 cucumber, diced
- 2 green onions, chopped
- 1 tablespoon sesame seeds
- Salt and pepper to taste
Instructions
- Preheat oven to 400Β°F (200Β°C).
- In a bowl, mix soy sauce, sriracha, and honey to make the marinade.
- Coat the salmon fillets with the marinade and let sit for 10 minutes.
- Place salmon on a baking sheet and bake for 12-15 minutes until cooked through.
- While salmon cooks, prepare rice according to package instructions.
- Assemble bowls by layering rice, sliced avocado, diced cucumber, and baked salmon.
- Garnish with green onions and sesame seeds.
- Serve immediately.
Notes
For a milder version, reduce the sriracha. Pair with a side salad for added freshness.
